So, it's 9:00 on Tuesday evening and my husband asks if we have anything sweet to snack on. I've been trying to cut back on the sweet stuff lately, so I didn't really buy any cookies or anything like that. I did, however, buy brownie mix to have for an emergency! (smile) The only thing was he nor I wanted to wait 45 minutes for them to bake. I just knew there had to be quicker way. So, I googled brownie cookies and sure enough, I found a recipe using a brownie mix to make ooey, gooey fudgy cookies and I had all of the typical ingredients. (I'm always searching for easy recipes) My husband, still skeptical about how long it was going to take, lost interest. That is until I brought him his glass of milk and cookies within 15 minutes! Let me tell you, they are awesome! The crispy outside and gooey inside make the perfect fudgy cookie. You can add chips for extra delicousness, too! I just didn't have any on hand. But, hubby loooovvvved them because his favorite part of the pan of
brownies is the crispy, chewy edge! Give it a try and add peanut butter or chocolate chips. I think I may make these for a Superbowl Party!
Super Easy Fudgy Brownie Cookies
I box of brownie mix - 18.3 oz.
1/4 cup of flour
1/4 cup of canola or vegetable oil
3/4 cup chips
*Mix well all ingredients in a bowl
Using a small (melon ball) scoop, 2" spoonfuls on ungreased cookie sheet
Bake 375 degrees for 9-10 minutes
Makes 18 cookies
